Why White Wine and Not Red

Red wine in Bali is a gamble. Not the wine itself. The temperature. A bottle of red sitting in a delivery bag between the shop and the villa gains heat faster than people think. Bali runs between 27 and 34 degrees year-round and there is no cool season worth mentioning. Red wine at 32 degrees tastes flat and harsh. White wine at 32 degrees tastes warm and wrong, but ten minutes in a fridge brings it back. Red needs an hour.

That ten-minute difference matters. When someone receives a bottle of white wine at their Pecatu villa or their Airbnb pool house in Kerobokan, it goes straight into the fridge and by the time they find two glasses and read the card, the wine is ready.
