Why White Wine and Not Red
Red wine in Bali is a gamble. Not the wine itself. The temperature. A bottle of red sitting in a delivery bag between the shop and the villa gains heat faster than people think. Bali runs between 27 and 34 degrees year-round and there is no cool season worth mentioning. Red wine at 32 degrees tastes flat and harsh. White wine at 32 degrees tastes warm and wrong, but ten minutes in a fridge brings it back. Red needs an hour.
That ten-minute difference matters. When someone receives a bottle of white wine at their Pecatu villa or their Airbnb pool house in Kerobokan, it goes straight into the fridge and by the time they find two glasses and read the card, the wine is ready. Red wine on the same afternoon would sit for an hour while the recipient decides whether to chill it or drink it warm. Most choose warm because they are impatient. Then they are underwhelmed.
I sell three wine options. Red, white, and sparkling. White outsells the other two combined from October through April. During those months, Bali heat is at its peak and nobody reaching for a glass at three in the afternoon wants something heavy. They want cold, crisp, and quick.
The WhatsApp That Changed How I Talk About Wine
A woman in Singapore messaged me on WhatsApp at 11pm on a Wednesday. Her best friend and the friend's husband were landing in Bali the next morning for their tenth wedding anniversary. They had booked a cliffside villa in Ungasan with an infinity pool looking out over the Indian Ocean. The sender wanted flowers and a bottle of wine waiting in the villa when they arrived.
She picked the 12 White Roses with 3 Calla Lilies and then asked "should I add red or white?" I asked whether the couple were big wine drinkers. The friend sent me a photo at 2:47pm of two glasses on the terrace railing with the ocean behind them and the empty bottle next to the vase of white roses. The caption was one word: "Perfect."
I have told that story to at least a dozen customers since. The "warm medicine" line closes the decision in about three seconds.

I did not start selling wine because I wanted to become a bottle shop. I started because I was delivering flowers to resort villas in 2015 and noticing something. The flowers would arrive, the concierge would place them on the table, the guest would smile, take a photo, and then wander off. The flowers were nice. But they did not give the guest anything to do right now. Wine changes that. The pattern I see in orders is this. Someone buys flowers first. They get to the checkout. Then they notice the wine add-on. They hesitate. About three in ten add the wine.
