What Arrives

Chocolate Storage

Bali is warm. The chocolates are selected to hold their shape during delivery but once they arrive, store them in a refrigerator if the room temperature is above about twenty-eight degrees. Before eating, take the box out and let it sit for five to eight minutes at room temperature. Cocoa butter needs to warm slightly on the tongue to release its full flavour. Chocolate eaten straight from the fridge tastes muted because the fat stays solid and the flavour compounds stay locked in.
