What's Inside

'Beautiful roses.' 'The roses were gorgeous.' Nobody mentioned the chocolates. I dropped to one rose and the feedback changed. 'Loved the rose and the chocolates.' Both parts got mentioned. For afternoon deliveries, he keeps the box in the cooler section of the vehicle and makes the chocolate drop his priority stop rather than the last one on the route.

They looked incredible in the shop with the air conditioning running, but Kadek delivered a box to a villa in Canggu on a 32-degree afternoon and three of the chocolates had started to lose shape by the time the recipient opened it. That was enough. I called every chocolate supplier in Denpasar asking for a selection that could handle the heat. The one I use now has a higher cocoa butter ratio in the shell which raises the melt point by a few degrees. It sounds like a small difference but those few degrees are the gap between a gift that looks right and a gift that looks like it sat in a car."

Care

Unwrap the rose and trim the stem at an angle. Place in a narrow vase with fresh water. The rose will open over two to three days. Store the chocolates in a cool place or refrigerate until ready to eat. If the chocolates have been in the fridge, let them sit for five minutes at room temperature before eating so the flavour comes through fully.
